roasted sweet potatoes make for a killer taco

Perhaps it’s because I have pumpkins on the brain, but when we went to roast the sweet potatoes yesterday, all I could think was how awesome they’d be in my favorite pumpkin seed spice coating. Cinnamon, ginger, cumin & ancho merge into a perfect compliment to a seed that’s been sauteed in butter and a bit of sugar. and awesome it was. (so much so that we are hoarding the leftovers in the freezer for one of those too busy to make dinner

    I never get past the roasting part, my sweet potatoes don’t make it into recipes! Love that pic!
