greek-style lamb “tacos” for dinner

There’s nothing like the beginning of the local farmers market season to shift dinner into high gear. Sometimes the most spectacular dinners come together in the most roundabout way. We’d gotten ground lamb from Sunshine Harvest yesterday at the Fulton Farmers Market opener with the intention of making mini sliders for dinner. I’d even picked up fresh feta from Singing Hills Dairy this morning at sister market, Kingfield‘s home opener. But when the time came, we just weren’t feeling it. In a moment of inspiration, we decided to deconstruct the burger by browning it taco-style and put it on a greek pita instead. et voila! Greek style lamb tacos!

I think we just gave birth to one of our new favorite dinners.

(general guidelines for the lamb: brown 1 lb ground lamb plus 1 Tbsp ground cumin & 1/3 C fresh chopped mint. add a smidge of olive oil if the lamb is very lean)

      I love anything in those greek style pitas, but yes, they were totes amazing! (especially for an accidental concoction) We’ll definitely be having them on a regular basis.
